These roasted carrots are a revelation! Full of concentrated sweet and warmly spiced flavor, the carrots develop golden, caramelized edges as they roast in the oven. So delicious!
Yield: 4 Servings
1lb. baby carrots 2 tbsp. olive oil
2 tbsp. honey 1/2 tsp. sea salt or to taste 1 tbsp. Vegetable Masala
1. Preheat the oven to 425F.
2. Whisk together the oil, honey, salt and spice blend until combined and toss the marinade with the carrots until they are evenly coated.
3. Put the carrots on a lightly greased sheet pan and arrange them in a single layer.
4. Roast for 25 minutes, until they are caramelized on the edges and easily pierced through by fork (the carrot time varies depending on the type of carrot used).
