The canteen at my school in India would serve chana masala or chole every Wednesday and it would sell like hot cakes. Years later in States, I wanted to create a blend that reflected my love for this dish. This is my take on the traditional North Indian cult favorite. My version tastes classic and is packed with loads of flavor and zing to give that much needed kick and character to the dish.
